Homemade Muesli

Homemade Muesli

Homemade muesli is easy to make, you don’t even need a recipe really, just a formula.

Muesli is a mix of rolled whole grains, nuts, seeds, dried fruits and seasoning. It’s easy to make in a big batch and keeps well. Stored in a glass jar, it’ll stay fresh for 1-2 months.

The Formula

  • 3 cups Rolled Whole Grains
  • ⅔ cup Nuts
  • ⅓ cup Seeds
  • 1 cup Dried Fruits
  • Seasoning

There is not a perfect ratio of ingredients. Keep in mind that the more fruit you add, the sweeter it will be.

Rolled Whole Grains

Oats | Rye | Buckwheat | Spelt

You can use any rolled grain for muesli. Natural and health food stores often have a selection of rolled grains, like barley, rye, spelt, oats.  The key is using rolled, not quick-cooking grains. Quick-cooking means ultra-processed. The less processed, the better. Heating the grain will make it easier to digest.

Nuts & Seeds

Pecan | Cashew | Pistache | Almonds | Walnuts | Brazil | Macadamias | Hazelnuts
Pumpkin | Sesame | Hemp | Sunflower | Flax

You can choose any nut you like. Heating them with the grain for five minutes will bring out the nuts oils and flavours, making the muesli even more delicious. You want to eep the flax seeds, hemp seeds and the chia seeds raw and add them at the end.  You can roast the pumpkin seeds, sesame seeds and sunflowers seeds at the same time as the nuts.

Dried Fruits

Goji | Raisins | Dates | Apricot | Plum | Cranberry | Banana | Mango | Coconut

Chop and slice the dried fruits into small pieces. Mix and match as much as you’d like, but try to find fruit with no sugar added. Raisins are easy and always delicious in your muesli, but there are many more options.

Seasoning

Cinnamon | Himalaya Salt | Cardamon | Raw Honey | (Raw) Whole Cocoa or Nibs

The grains, nuts, seeds and dried fruits give most of the flavours that you want. What your muesli does need to bring the flavour out more, is a pinch or two of quality salt and some ground warming spices, like cardamom and cinnamon.

Instructions

  1. Prepare and measure all the ingredients in separate small bowls. Grains together, nuts together, seeds together, dried fruits together and seasoning together. The coconut oil is optional.
  2. Take a big wok and warm a big spoon of coconut oil. Add the grains  to the pan with a pinch of salt and stir for a couple of minutes on medium heat.
  3. Add the nuts and seeds (except hemp, chia and flax seeds) and keep stirring slowly for three minutes.
  4. Add the seasoning and fruits and stir for another two minutes.
  5. Turn off the heat and let it cool to lukewarm or room temperature.
  6. Add the seeds and the raw honey (optional). Taste to see if you need to add anything.
  7. Make sure to let it cool down all the way before storing it in a nice glass jar.
  8. You can add it to your smoothies or (vegan) yoghurts, enjoy!
