Green Gazpacho
This beautiful creamy raw soup is packed with nutrition: plant based protein, vitamins and minerals. Green Gazpacho is a perfect healthy snack, or a delicious part of lunch or dinner.
Ingredients
~ one serving
- ½ or 1 avocado
- 10 cm cucumber
- ½ lime juice
- ¼ cup water
- ½ stick celery
- ⅛ cup walnuts roasted or soaked cashews
- small handful parsley
- 5 mint leaves
- 5 basil leaves
- 2 tsp olive oil
- 1 tsp apple vinegar
- ⅛ tsp salt to taste
- green chilli to taste
Optional Extra Ingredients
- ¼ green bell pepper
- 1 small garlic clove
- small handful baby spinach
Topping
- 2 roasted walnuts or some basil leaves
- ½ tsp olive oil
Instructions
Preparation time | 10 minutes
- If you use cashews, soak them for at least 4 hours to get the creaminess you’re looking for.
- Put all ingredients except topping together in a blender and blend into a raw soup with a good blender. If you don’t have a blender, a hand blender will do. Pour it into a bowl.
- Top with a bit of virgin olive oil and broken roasted walnuts.
- Serve cool or room temperature.
Notes
- Great to bring along to work or a picnic. Just find a glass jar that seals well or a food grade insulated food canister that keeps it cool.
- You could make a double portion as a snack for tomorrow or share with a friend.
