Detox Salad
with Spirulina Avocado Dressing
This refreshing light salad is easy to make, nutritious and so delicious. The spirulina is a surprise that goes very well with avocado. Try out to make the dressing, you will love it!
Ingredients

Multiply ingredients by the amount of people joining.
Salad
- ⅓ cup / 1 stick white celery
- ½ cup / 1 handful lettuce
½ cup / 1 handful baby kale - ½ cup / 1 handful watercress
- ½ cup / 5 cm cucumber
Topping
- small handful broccoli shortly fried or raw
- 3-5 green asparagus chopped into bite size
- 1 tbsp roasted buckwheat
- 1 tbsp pecan nuts or almonds
- 1 tbsp olive oil
Dressing
- ⅓ avocado
- ½ tsp spirulina powder
- ⅓ cup / ¼ small zucchini, chopped
- ⅛ cup hemp seeds
- ½ tbsp mellow white miso, or whatever miso you have
- 1 tbsp lemon juice
- ¼ cup water
- ⅛ tsp salt
An alternative version without a blender
- ½ tsp spirulina
- 2 tbsp olive oil
- ½ tbsp lemon juice
- ¼ tsp himalayan salt
- ⅓ avocado chopped
- ⅓ cup / ¼ small zucchini, chopped fine
Instructions
Preparation time | 20 minutes
Cook time | 10 minutes
- Wash and dry all salad ingredients. Use a salad centrifuge for the green leaves if you have. Otherwise pad them dry with a clean towel.
- Chop the asparagus into bite size pieces. Add asparagus, a bit of olive oil and sea salt to the frying pan and fry them for a couple of minutes.You could add the broccoli to fry with asparagus, or keep broccoli raw. Set aside in a bowl and wipe the frying pan with kitchen paper or dry cloth. .
- Place the buckwheat and pecan nuts (or almonds) in the dry frying pan and roast them for a few minutes. Keep moving ingredients so they don’t burn. You’ll smell it when they’re done. Set aside to cool.
- Tear the lettuce, watercress, kale into pieces. Finely chop the rest of the salad ingredients. Mix them together and place onto a bowl or plate.
- To prepare the dressing add all the ingredients into your blender and blend into a smooth paste. Taste if you need to add more salt or lemon juice.
- Scoop the dressing on top of your salad.
- Add the asparagus and broccoli on top of the salad.
- Add the buckwheat and pecans on top of your salad.
- Drizzle a bit of extra virgin olive oil on top if you like and enjoy!
Notes
- If you don’t have spirulina, leave it out.
- If you don’t have miso, leave it out.
- Easy to take away, keep the sauce in a separate jar.
- Add raw sprouted bread from your organic market if you need the extra energy.
